Heat chicken according to package directions.
Meanwhile, mix tomatoes, garlic, basil, balsamic vinegar, pepper and olive oil in a large bowl. Spoon tomato mixture evenly onto heated chicken.
Top each cutlet with a sprinkling of Parmesan cheese, if desired and serve warm.

This was a big hit with my family... we love all the Perdue chicken products (esp. the Italian cutlets), and this just made it even better! Made a quick side salad, and some linguini w/ butter, and vwoala! Happy kids + Happy Hubby = HAPPY ME!!
