1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon lemon juice
1/4 cup all-purpose flour
3 tablespoons olive oil, divided
4 thin slices Manchego cheese (Alternate: Monterey Jack or white cheddar cheese)
4 thin slices ham
1 large tomato seeded and choppped to garnish
1 teaspoon chopped parsley to garnish


  1. Heat oven to 375°F. Place chicken on a plate and sprinkle with salt, pepper and lemon juice. Cover; refrigerate 10 minutes. Coat chicken evenly with flour. Heat 2 tablespoons of the oil in large skillet over medium high heat. Cook chicken until golden on both sides, about 3 minutes per side.
  2. Meanwhile, spread remaining oil on the bottom of a baking pan. Place chicken breasts in oiled pan.  Top each breast with 1 slice of each ham and cheese.
  3. Bake 10 to 12 minutes or until cheese is melted and a thermometer inserted into center of chicken breast reads 170°F. Garnish with chopped tomato and parsley, if desired.

Note

Manchego cheese (the un-aged variety is a semi-soft cheese with a whitish color).  It can be found in some Latino Markets in the specialty cheese section.
