Relish
1. Cut pineapple into large half rings, about an inch thick. Spray pineapple with cooking spray and place onto grill. Cook each side for 2-3 minutes until the pineapple has dark grill marks on both sides.
2. Rough chop the pineapple and place into a mixing bowl. Add the scallions, red pepper, lime juice, jalapeno, honey, salt and pepper. Blend well and let marinate for two hours.
Chicken
1. Grill seasoned chicken breasts until internal temperature has reached 170°.
Serving
1. Prepare the microwave ready Jasmine Rice according to package instructions. Serve chicken breasts over top rice and top with charred pineapple relish.
Tip
Prepare charred pineapple relish at least 2 hours prior to serving or the day before.
