In a large non-stick skillet, mix together ground turkey, carrots, peppers, water chestnuts, water and stir-fry sauce. Bring to a simmer and heat through, approximately 2 minutes. Remove from heat and mix in scallions and/or cilantro and keep warm.
Lay lettuce leaves on clean, flat surface and spoon 1/3 cup turkey mixture into center of each leaf. Wrap up in a packet to contain mixture and serve immediately.

Serve over udon or soba noodles.
Serve as a topping for pasta, rice or salad.
Use filling inside of bell pepper halves.

I made this recipe last night, and I honestly cannot believe how amazing it was. And the best part was that it took all of a few minutes to organize and a few minutes to heat through. I cannot wait to make it again, hopefully tonight!
