Quick Chicken and Pasta

1 cup diced, cooked PERDUE® chicken meat
1 tablespoon olive oil
1/2 cup chopped onion
1 can Italian recipe ready-to-serve tomatoes (14 1/2 ounces)
2 cups cooked penne pasta
Freshly grated Parmesan cheese


  1. In large, nonstick skillet, over medium high heat, heat oil.
  2. Add onion; sauté 2 to 3 minutes or until softened. Add chicken; sauté 1 minute. Add tomatoes; simmer 3 to 5 minutes to blend flavors and heat through.
  3. Serve chicken mixture over pasta. Sprinkle with grated Parmesan cheese.
