Warm olive oil in a large skillet over medium-high heat. Add chicken and brown for 1-2 minutes on each side.
Stir in orange juice, brown sugar, honey and vinegar. Reduce heat to medium and simmer until sauce has thickened lightly for 6-8 minutes and meat thermometer inserted in center registers 170° F.
To serve, set chicken on plates and spoon sauce on top.

At 55+ I just started cooking. I managed to screw this up and it was still real good! I think I over cooked the glaze and turned it in to a carmel kinda sauce, but it was still good. Also, don't forget to brown it some first. Oh well, live and learn and with yummy, simple things like this that I just can't seem to get too wrong, it'll be fun!

This was delicious!!! Very easy to prepare too! I did flour the chicken before frying to help the honey\\orange mixture thicken easier.
I will definitely be preparing this meal again.

I'm single, and I never cook for myself, because I'm not very good at it and don't have the time. I was looking for something fast and more nutritious than fast food or frozen dinners. I came across this and estimated the recipe for one serving. It came out fantastic - I don't think you could go wrong with this recipe (I would have if I could have). I put the chicken on a bed of rice and added some broccoli, and I ended up with a fresh, inexpensive, fast and surprisingly delicious meal.
