In a shallow dish stir, together bread crumbs, Parmesan cheese and pepper. Brush both sides of each chicken breast with mustard. Press the chicken breasts into the crumb mixture, coating both sides completely.
Spray the chicken on both sides with spray.
Set a large, ovenproof sauté pan over medium heat. Add chicken and brown on each side, 1 - 2 minutes.
Transfer to oven and bake 15 - 20 minutes, until meat thermometer inserted in center registers 170° F.
Note
This recipe may easily serve 2 people instead of 4 people by using half the quantity of all ingredients

I too, tried the honey orange recipe first (good) and then this for something different. It was extremely easy and I had the few ingredients on hand. Came out very moist! Next time. I may try adding mozzarella cheese on top as others suggested.

I love this recipe!! After baking, I sprinkle the chicken with mozzarella cheese and put it back in the oven until the cheese melts. Yum!!

So ive been making the honey orange glazed chicken and decided to try something new. this recipe was super easy to do and the chicken came out very moist!! definitely will make again!!

Very good. We used italian flavored perfect portions and put shredded mozarella cheese on top for the last few minutes in the oven. Great !
