Ingredients
1 12 oz. jar of tomato based sofrito
1 bunch fresh cilantro
1 jar green olives
1 pkg. microwaveable Spanish rice
Step 1
Heat 1 tablespoon of cooking oil of choice in a skillet. Add the full package of PERDUE® FRESH CUTS® DICED chicken into your hot pan. Allow for the chicken to brown in the pan, stirring as needed.
Step 2
Add 15 halved olives to the pan along with the full jar of sofrito.Allow the mixture to simmer on low, incorporating the flavors.
Step 3
Follow the instructions on your rice packaging to prepare the rice. Serve the sofrito chicken over rice.
