Ingredients
1/2 cup celery, chopped
1/2 cup greek yogurt
1/2 lemon, zested and juiced
1 1/2 tbsp chopped fresh parsley, dill, tarragon, or chives
1 tsp Dijon or coarse grain mustard
1/2 tsp salt
1/4 tsp black pepper
2 avocados
Green leaf lettuce, optional
handful of grapes
handful of sliced almonds
Step 1
In a bowl, mix together the chicken and the celery. Set aside
Step 2
In a small bowl, whisk together the greek yogurt, lemon zest and juice, fresh herbs, mustard, salt and pepper.
Step 3
Stir together the chicken, grapes, almonds and celery with the mixture until well combined
Step 4
Serve your California Chicken Salad on 1/2 an avocado, whole grain bread or simply on a bead of lettuce if desired! It’s also great served on little slider buns or over grains or zucchini noodles!
