Ingredients
1 tbsp. cooking oil
1 small onion, chopped*
2 garlic cloves, chopped
4 oz. can chopped green chilies
2 cups chicken stock
2 15-oz. cans cannellini beans and liquid
1 cup frozen sweet corn, thawed
1 tbsp. chili seasoning*
1/2 cup. cilantro (optional)
1 cup. cheddar cheese (optional)
Step 1
In a medium sauce pot over medium heat, add cooking oil, followed by the chopped onions and garlic. Saute for 3-4 minutes while stirring occasionally.
Step 2
Add remaining ingredients, bring to a boil, reduce to simmer, and cook for 10- 15 minutes. Season with salt and pepper to taste.

TIP: Make your own chili seasoning by combining 1 tsp. cumin and 1 tsp. smoked paprika.
Step 3
Serve in bowls, and garnish with cheese and cilantro, if desired.
