Ingredients
1/3 cup light mayonnaise
2 tbsp. orange marmalade
1 tbsp. Dijon mustard
1 tbsp. low-sodium soy sauce
1/4 tsp. red pepper flakes, optional
1 lb. steamed or grilled fresh asparagus or green beans, chilled
Step 1
Heat chicken strips according to package directions.
TIP
TIP: To grill asparagus or green beans, brush grill surface with oil olive and grill until tender (2 to 3 minutes). Chill and use as directed above.
Step 2
In a bowl combine mayonnaise, marmalade, mustard, soy sauce and red pepper flakes, if desired; mix well.
Step 3
For each serving, place three to four asparagus spears on each plate. Top with 2 whole grain chicken strips and drizzle with 2 tablespoons of orange-mustard dipping sauce.
