Ingredients
3 tbsp. vegetable oil (alternate: olive oil)
1 medium onion, thinly sliced
1 small green bell pepper, thinly sliced
1 stalk celery, thinly sliced
2 garlic cloves, minced
2 tbsp. tomato paste
1/4 cup water
salt and pepper to taste
Step 1
Heat oil in a large skillet over medium high heat. Add chicken; cook about 4 to 5 minutes, turning once until chicken is lightly browned on both sides.
Step 2
Add onion, bell pepper, celery and garlic. Cook and stir for about 5 minutes until onion is tender and chicken is golden brown.
Step 3
Stir in tomato paste, water, salt and pepper. Bring to a boil. Reduce heat to medium low; simmer 4 to 5 minutes or until meat thermometer inserted in center registers 170°F.
