Ingredients
1 cup cooked quinoa
1 medium tomato, chopped or 1/2 cup cherry tomatoes, halved
1/4 cup black olives, sliced
1/4 cup feta cheese crumbled
2 tbsp. olive oil
1 lemon, juiced
1 (8-oz.) container store bought hummus
4 small pita breads
Step 1
Chop Roasted Short Cuts into bite sized pieces.
Step 2
In a bowl, combine the short cuts, quinoa, chopped tomato, black olives and feta cheese.
Step 3
Drizzle with olive oil and lemon juice and toss to combine.
Step 4
Assemble each Bento Box, with about 1 cup Short Cuts Quinoa Salad, 2 ounces hummus and a pita bread.
