Ingredients
1 large eggplant, cut into 8 slices
1 medium red onion, cut into 4 slices
2 tbsp. olive oil
2 cups arugula leaves
1/2 cup shredded reduced-fat Italian cheese blend
1 cup heated prepared tomato sauce or 1/2 cup balsamic vinegar
Step 1
Preheat grill or broiler on high for 5 minutes.
Step 2
Lay eggplant and onion slices on a cookie sheet and lightly brush with olive oil.
Step 3
Grill or broil eggplant and onion slices until tender and golden brown, about 3 to 4 minutes per side. Keep warm.
Step 4
Cook chicken breasts according to package instructions. Chicken breasts are cooked when chicken reaches an internal temperature of 170°F.
Step 5
For each serving, stack in order: 1 eggplant slice; 1/2 cup arugula; 1 onion slice; 1 chicken breast; 1 tablespoon cheese; 1 eggplant slice; 1/4 cup prepared tomato sauce; and top with 1 tablespoon of cheese.
