Ingredients

1 pkg of grape tomatoes

1 pkg of diced onion (or ¼ of an onion, diced per packet)

1 pkg of mixed olives (packed in spiced olive oil)

1 pkg feta cheese, crumbled (or precrumbled feta)


Step 1

Preheat oven to 375℉.

Step 2

Place a PERFECT PORTIONS® BONELESS SKINLESS CHICKEN BREAST on a lightly oiled square of aluminum foil.

Step 3

Season with salt and pepper.

Step 4

Add olives, tomatoes,onions, and feta cheese to the top of the chicken breast.

Step 5

Fold the opposing edges of the foil up to meet, and then roll them over, creasing each turn as you proceede.

Step 6

Crimp/fold the open edges remaining on the foil packet to create an air tight packet. This will allow for the chicken and toppings to steam inside the packet.

Step 7

Place packets in an oven proof skillet or on a cookie sheet and bake for 14 minutes or until the internal temperature of the chicken reaches 170℉.

Step 8

Be careful opening the packaging as steam will be released when the foil is breached.
