Ingredients

1/3 cup mayonnaise

1 1/2 tbsp. avocado oil

2 tbsps. chopped fresh cilantro

1 clove garlic, minced

1 tbsp. lime juice

1/2 tsp. ground cumin

1/2 tsp. chili powder

1 tsp. hot sauce (optional, for additional heat)

Salt and pepper to taste

Extra avocado oil for griddling

Sliced avocado, for serving


Step 1

In a large resealable plastic bag, combine the mayonnaise, avocado oil, chopped cilantro, minced garlic, lime juice, ground cumin, chili powder, hot sauce (if using), salt, and pepper. Seal the bag and shake well to thoroughly mix the ingredients. Add the Perdue Perfect Portions boneless, skinless chicken breasts to the bag, seal it, and shake until the chicken breasts are evenly coated with the avocado herb mixture. Let the chicken marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor.

Step 2

Preheat your griddle over medium-high heat and lightly grease it with extra avocado oil.

Step 3

Once the griddle is hot, remove the chicken breasts from the marinade, allowing any excess marinade to drip off, and place them onto the griddle. Cook the chicken breasts for 5-6 minutes per side, or until they are golden brown and cooked through, with an internal temperature of 170°F.

Step 4

Remove the chicken breasts from the griddle and let them rest for a few minutes before serving.

Step 5

Serve the Griddled Avocado Herb Chicken hot with sliced avocado on top, and your favorite sides, such as grilled vegetables or a fresh salad.
