Ingredients
2 tbsp olive oil
2 tsp Fajita seasoning
1 lime, zested and halved
3 small red, yellow or green bell peppers, sliced lengthwise
1/2 cup shredded sharp cheddar, pepper jack cheese, or Mexican blend cheese
1/4 cup cilantro leaves, chopped, for garnish
Step 1
Marinate
Combine the chicken, the olive oil, the fajita seasoning and the lime zest in a resealable plastic bag. Toss to coat, refrigerate, and then let marinate for about 20 minutes to an hour.
Step 2
Roll
Lay a chicken thin slice on a plastic cutting board. Cover the chicken with shredded cheese then place 4 to 6 bell pepper slices across the middle of the chicken. Roll up chicken and secure with a toothpick. Repeat with remaining chicken, cheese and peppers.
Step 3
Grill
Heat a grill or grill pan over medium heat. Grill the chicken roll ups for 7 to 10 minutes per side until a meat thermometer inserted in the center reaches 170 degrees F. Grill the lime halves, cut side down, until charred, about 3 to 4 minutes.
Step 4
Serve
Transfer the Chicken Fajita Roll Ups to a serving plate. Squeeze the grilled lime halves over the chicken and garnish with chopped cilantro. Serve with grilled veggies on the side! *Remove toothpick before serving/eating
