Hawaiian Luau Chicken Kebabs with Chili Dipping Sauce

Serves 4
Ingredients
4 PERDUE® Fresh Boneless Skinless Chicken BreastsorPERDUE® FRESH CUTS® Fresh Pre-Cut Diced Chicken Breast
4 tbsp Olive Oil
2 Garlic Cloves
Salt
Pepper
1 Onion
1 Pineapple
3 Bell Peppers
1 Lime
1 tbsp Chinese BBQ
2 tsp Chili Flakes
2 tsp Chopped Parsley
Step 1
Cut chicken breasts into small cubes. Mix 2 tbsp olive oil, 2 cloves minced garlic, and salt and pepper Season chicken in mixture.
Step 2
Cut red onion, pineapple, and peppers into bite sized pieces. Thinly slice limes. Lightly sear seasoned chicken pieces in a pan. Skewer all ingredients. Throw them on the grill!
Step 3
To make the dipping sauce: Combine 2 tbsp olive oil, and 1 tbsp Chinese BBQ sauce. Add 2 tsp chili flake. Add 2 tsp chopped parsley. Mix and serve alongside kebabs!
