Ingredients
3 cups cooked quinoa
1 avocado, seeded, peeled, and sliced
1 15-oz can chickpeas, drained and rinsed
1 cups halved cherry tomatoes
1/2 red onion, thinly sliced
1/2 cup Italian vinaigrette
Step 1
Cook quinoa according to packaged instructions. Let cool for 5-10 minutes.
Step 2
Divide quinoa equally among 4 serving bowls.
Step 3
Divide remaining ingredients equally among 4 bowls, starting with avocado, followed by chickpeas, tomatoes, and onion slices. Drizzle vinaigrette overtop and serve.
