Ingredients

1/4 cup corn oil or vegetable oil

1/2 tsp. ground annatto or saffron

1/4 cup finely chopped onion

2 garlic cloves, minced

1 tbsp. fresh lemon juice

1/2 tsp. ground cumin

1/2 tsp. salt

1/4 tsp. ground red pepper


Step 1

Preheat grill or broiler.

Step 2

Mix oil, annatto, onion, garlic, lemon juice, cumin, salt and red pepper in a small bowl, until blended.

Step 3

Grill or broil chicken breasts, turning occasionally and brushing with seasoning mixture for 15 minutes or until meat thermometer inserted in center registers 170°F.
