Ingredients
1/2 tsp. salt
1/4 tsp. ground black pepper
6 tbsps. all-purpose flour
2 tbsps. olive oil
2 tbsps. unsalted butter
3 cloves garlic, minced
1 cup chicken stock
1 cup heavy cream
1/2 cup parmesan cheese, grated
1 tsp. chili flakes
1/4 tsp. oregano
0.25 tsp. thyme
1/3 cup sundried tomatoes, chopped
1 tbsp. fresh basil leaves
Step 1
Season both PERDUE® PEREFCT PORTIONS® Boneless Skinless Chicken Breast All Natural with salt and pepper, then dredge in flour and shake off any excess.
Step 2
In a large skillet, heat olive oil and melt the butter on medium heat. Swirl pan to coat with oil and butter evenly.
Step 3
Brown the chicken for 4-5 minutes on each side or until golden brown and cooked through. Transfer onto a plate, cover, and set aside.
Step 4
Leave in the remaining oil and butter from the chicken and sauté the garlic for one minute. Add the chicken stock and deglaze the pan scraping any bits stuck to the bottom of the pan with a wooden spoon.
Step 5
Turn down the heat to medium-low and add the heavy cream and the parmesan cheese to the skillet. Let the sauce simmer for two minutes, then add chili flakes, thyme, and oregano.
Step 6
Season with salt and pepper, add the sundried tomatoes then put the chicken back in the sauce and let the sauce simmer and thicken for a few more minutes.
Step 7
Garnish with chopped fresh basil leaves and serve warm.

TIP: Make this a full meal with some added pasta or instant rice. And a bonus tip, use what chicken you need now and store the rest for dinner another night.
