Ingredients
2 cups cooked cous cous
1 cup grilled asparagus, cut into 1 inch pieces
1 cup red bell pepper, diced
1/2 cup scallions, sliced
1/4 cup crumbled feta
1/4 cup prepared lemon vinaigrette
2 tbsp. toasted pine nuts
Step 1
Grill chicken breasts 3 to 4 minutes per side or until firm to the touch. Remove from heat and keep warm or bring to room temperature.
Step 2
In a bowl combine remaining ingredients and toss to coat.
Step 3
Divide salad among 4 plates. Place a grilled chicken breast (whole or sliced) along the side of the salad and serve.
