Ingredients
1 pkg. (5.6 oz.) couscous with toasted pine nuts
1/3 cup dark or light raisins
1 orange, yellow or red bell pepper, seeded and diced
1/4 cup chopped or slivered red onion
2 tbsp. minced fresh cilantro or parsley
1/2 cup balsamic vinaigrette dressing, divided
1 head romaine lettuce
Step 1
Prepare couscous following package instructions. Add raisins and fluff with a fork. Place couscous in a large bowl and allow to cool.
Step 2
Add chicken, pepper, onion and cilantro. Add 1/4 cup vinaigrette and toss together gently, but thoroughly.
Step 3
Serve salad on a bed of romaine and drizzle with remaining dressing.
