Ingredients
4-6 6 inch Sub Rolls
1/2 cup Cucumber, julienned
1/4 cup Carrot, julienned
1 Jalapeno, sliced into thin rounds
1/4 cup Seasoned Rice Wine Vinegar
1/4 cup Mayonnaise
2 tsps. Sriracha
1 tsp. Lime Juice
1 tbsp. Vegetable Oil
Salt and Pepper to taste
Optional Cilantro leaves for Garnish
Step 1
Heat a large saute pan over medium-high heat. Once Hot, add oil to pan, followed by Sesame-Ginger Chicken. Cook for 4-5 minutes while stirring periodically. Remove from heat.
Step 2
In a small mixing bowl, add cucumber, carrot, jalapenos, and the rice wine vinegar. Let marinate for 5-10 minutes, and strain excess liquid.
Step 3
In a separate mixing bowl, whisk together the mayo, sriracha, and lime juice.
Step 4
Start assembling. Place an equal portion of chicken in each roll, followed by about 2 tablespoons of the quick pickled vegetables, a drizzle of sriracha mayo, and finished with some fresh cilantro leaves.
