Ingredients
2 tbsp. olive oil
2 medium red bell peppers, core removed, sliced
1 large onion, peeled and sliced
1 can (28 oz.) diced tomatoes with garlic, basil and oregano
Ground pepper to taste
Step 1
Coat a large no-stick skillet with oil and heat over high heat. Add chicken and brown for 1 minute on each side. Remove chicken and set aside.
TIP
TIP: This recipe may easily serve 2 people instead of 4 people by using half the quantity of all ingredients.
Step 2
Reduce heat to low and add peppers and onion to skillet. Cover and cook 8 minutes, stirring occasionally.
Step 3
Add chicken, tomatoes and ground pepper. Cover and simmer 8 minutes until meat thermometer inserted in center registers 170°F. Serve with pasta if desired.
