Ingredients
2 tbsps. vegetable oil
2 tsps. Sazón seasoning
1/2 tsp. salt
1/4 tsp. black pepper
1 14.5 oz. bag stir-fry peppers and onions
1/2 cup sofrito
1/2 cup chicken broth
2 pkgs. Microwave Spanish rice
Step 1
Preheat oven to 400 degrees F. Coat the chicken with vegetable oil and season with Sazón seasoning, salt, and pepper.
Step 2
In a medium oven-safe baking dish, add the stir-fry peppers and onions. Combine the sofrito and chicken broth and pour over peppers and onions. Arrange the chicken on top of the peppers.
Step 3
Place the baking dish in the oven and bake for 15 to 20 minutes, basting the chicken with the sauce halfway through cooking time. Chicken is done when a meat thermometer inserted in the center reaches 165 degrees F.
Step 4
Serve Sofrito Chicken with a side of microwaveable Spanish rice.
