Ingredients
2 1/2 cups spicy tomato juice
1 can (16 ounces) chili beans in chili sauce
1 can (11 ounces) Mexican style corn
1/2 cup chunky salsa
Reduced fat sour cream, optional
Chopped cilantro, optional
Step 1
Combine juice, beans, corn, salsa and chicken in a large saucepan; bring to a boil over high heat.
Step 2
Reduce heat to low, cover and simmer 10 minutes.
Step 3
Spoon soup into bowls. Garnish with sour cream and cilantro, if desired.
