Ingredients
3/4 pack Cream cheese (softened)
1/2 cup Sour cream
3/4 cup Cheddar cheese, shredded
1/2 cup Black beans, drained/rinsed
1/2 cup Corn, drained/rinsed
1/3 cup Green Chili’s, diced
1 cup Salsa Fresca
1 tbsp. Vegetable Oil
Salt and Pepper to taste
Add a few dashes of hot sauce if you like spice. Serve with Tortilla Chips
Step 1
Preheat oven to 400°
Step 2
Heat a large saute pan over medium heat, once hot, add oil, followed by chicken. Cook for 5-7 minutes while stirring, or until chicken is heated through and is starting to slightly brown.
Step 3
Blend cream cheese and sour cream in mixing bowl until completely smooth. Carefully fold in chicken, corn, black beans, and salsa.
Step 4
Transfer to baking dish, and top with cheese and bake for 20 minutes or until melted and creamy.
