Ingredients
1/2 lb. Hulled Strawberries
2 tsp. Grated Lemon zest
3 tbsp. Lemon Juice
1/3 Chipotle Peppers in Adobo Sauce, Finely Chopped
1/4 tsp. Salt
2 tbsp. Water
1 tbsp. Cornstarch
3 cup Sugar
2 cup Sour Cream
1/2 cup Chopped Basil
Salt and Pepper
Step 1
Preheat your oven to 350°F. Line baking sheet with foil and spray with cooking spray. Season wings with Salt and pepper. Arrange wings on the baking sheet. Bake for 25 to 35 mins until wings are golden brown and chicken is cooked through. Chicken is done when a meat thermometer inserted in the center reaches 170°F.
Step 2
In a food processor, place half of the strawberries and process until pureed. Dice the remaining strawberries. In a large saucepan, heat pureed and diced strawberries along with lemon zest, lemon juice, chipotle peppers and salt, over high heat. Mix water and cornstarch in a separate bowl and add.to strawberry mixture. Bring to a boil. Stir in sugar and return to a boil for 1 minute. Remove from heat and skim off foam. Let cool.
Step 3
In a medium bowl, combine sour cream and basil. Mix well.
Step 4
Take cooked wings and place in a large bowl. Toss with strawberry mixture until coated well. Serve with basil sour cream.
