Ingredients
1/4 cup soy sauce
1/4 cup pineapple juice
5 tbsp. brown sugar, divided
2 tbsp. olive oil or vegetable oil
1 tsp. garlic powder
1/2 tsp. ground ginger
3 cups large fresh pineapple chunks
2 mangoes, peeled and cut into 1-inch chunks (about 3 cups)
Kebab skewers*
Step 1
Preheat grill or broiler. In small bowl, whisk together soy sauce, pineapple juice, 3 tablespoons brown sugar, oil, garlic powder and ginger until blended.
Step 2
Grill or broil chicken, turning occasionally and basting frequently with soy mixture, 20 minutes or until meat thermometer inserted in thickest part of drumstick registers 180°F. Note: Do not baste during last 5 minutes of grilling.
Step 3
Meanwhile, alternately thread pineapple and mango chunks on skewers. Sprinkle remaining 2 tablespoons brown sugar over fruit kebobs. Grill kebabs away from direct heat (over the "off" side of the grill or on the edge of grill); 3 minutes or until heated through.
Step 4
Serve chicken with fruit kebabs.
