Ingredients
1 1/4 cups shredded carrots
1 1/4 cups red bell pepper, diced
1 cup water chestnuts
1/3 cup water
1/3 cup stir-fry sauce
1 cup scallions, sliced, optional
1 cup fresh cilantro, minced, optional
12 Romaine lettuce leaves
Step 1
In a large non-stick skillet, mix together ground turkey, carrots, peppers, water chestnuts, water and stir-fry sauce. Bring to a simmer and heat through, approximately 2 minutes. Remove from heat and mix in scallions and/or cilantro and keep warm.

TIP: Variations: Serve over udon or soba noodles. Serve as a topping for pasta, rice or salad. Use filling inside of bell pepper halves. Use as a warm sandwich or omelet filling.
Step 2
Lay lettuce leaves on clean, flat surface and spoon 1/3 cup turkey mixture into center of each leaf. Wrap up in a packet to contain mixture and serve immediately.
