Ingredients
1 pack PERDUE® Fresh Ground Chicken
1/4 cup panko bread crumbs
1/4 cup onion, finely chopped
1 large egg
5 serrano peppers, julienned
3 cloves garlic, minced
6 cups chicken stock
1 can (14.5 oz) fire roasted diced tomatoes, undrained
1 small onion, cut into thin strips
1 cup bok choy leaces, cut into 1-inch strips
1 cup fresh baby carrots, julienned
1 cup roasted sweet red peppers, julienned
Step 1
In a large bowl, combine the first 4 ingredients and shape into 3/4-in. balls. In a large skillet, heat oil over medium heat until browned.
Step 2
Add stock, tomatoes, onion, bok choy, carrots, red peppers, serrano peppers, garlic, and meatballs. Cook covered, on medium for 1 hour or until meatballs are cooked through and vegetables are tender.
