Ingredients
2 tbsp. olive oil
1 can (15 oz.) black beans, drained and rinsed
1/4 cup scallions, sliced
1/2 cup roasted red peppers, diced
1 1/2 cups fresh mango, diced
2 tbsp. lime juice
8 lettuce leaves, firm and intact
hot sauce, to taste
Step 1
Grill chicken breasts 3 to 4 minutes per side or until firm to the touch. Remove from the grill and keep warm.
Step 2
In a bowl combine remaining oil, beans, scallions, red peppers, mango and lime juice; season with hot pepper.
Step 3
Place 2 lettuce leaves on each plate. Divide salad among 4 plates. Top each with a grilled, sliced chicken breast. Serve salad and sliced chicken in lettuce as a carrier.
