6 small soft tortillas
0.5 cup salsa
1 cup finely shredded iceberg lettuce or green cabbage
0.5 cup shredded cotija or cheddar cheese
0.25 cup small-diced white onion
Fresh chopped cilantro (optional)
Juice of 1 lime (optional)
Diced jalapenos (optional)
Step 1
Place a medium saute pan over medium-high heat; add chicken and ¼ cup salsa. Heat chicken, stirring often, for 3-4 minutes or until meat is heated through.
TIP
TIP: Crunched for time? Heat shredded chicken in the microwave, following package instructions.
Step 2
Wrap tortillas in a slightly damp paper towel and warm in the microwave for 30 seconds.
Step 3
Assemble tacos by topping warm tortillas with meat, the remaining salsa, lettuce, cheese and onion. Finish with a sprinkle of cilantro, lime juice and jalapenos, if desired, and enjoy.
